Biscuits (Vegan)

Who doesn't love a warm fluffy biscuit? These don't disappoint! I love them with soup but they'd also be deadly with some peanut butter and jam!




Ingredients:
2/3 cup non dairy milk
1tsp cider vinegar
2 tbsp earth balance or other vegan margarine
2 tbsp coconut oil
1 cup flour
1 tsp salt
1tbsp baking powder

Combine the non dairy milk with vinegar and set aside for about 5 minutes. Combine dry ingredients and use a pastry blender (if you have one) or 2 forks to cut in the earth balance and coconut oil until crumbly. Add in just enough liquid to create a dough. Cover and set aside for 30 minutes. Preheat over to 450. Pat dough out to about ½ inch thickness and cut out biscuits using a cookie cutter or glass. Place on cookie sheet and bake for about 10-15 minutes. Enjoy!
